Tasting Notes

Aromas of red plum, black cherry, dried bell pepper and forest floor. The palate features mushroom and earth, with light floral tones and a balance palate of acid, alcohol and tannin. Made from 100% Cabernet Franc grapes and reminiscent of the Terroir; flinty-clay soils, on the left bank of AOC Chinon. Even with young vines, approximately 15 years old this wine is built to last. The vinification begins with cold maceration followed by alcoholic fermentation at a controlled temperature of 68 to 77 degrees F; malolactic fermentation; reduced time in vats so that the wine is supple and fruity; bottled during the spring.


"Domaine Dozon is located south of Chinon, on the left bank of the Vienne. Originally a traditional livestock and produce farm, they turned to viticulture with the acquisition of 5 ha within the renowned Clos du Saut au Loup in the early 20th century. Eric Santier, a Chinon native, purchased the Domaine in 2013 from Laure Dozon, with help from the esteemed Baudry family, for whom he had worked. Some of the older, less desirable barrels were discarded, replaced with fiberglass tanks and Santier now seeks to make more pure and fresh expressions of wine from his village.
